Vanilla Cake Recipe
We are always looking for the master of all cake recipes. Here is a vanilla cake recipe that is a family favorite. It is not too sweet, but just enough to tease your taste buds into wanting more vanilla cake. It is a sponge cake recipe that can be used for your most special occasions, such as weddings, Quinceaneras, and birthdays. If you desire, you can even use this spongy vanilla cake recipe on an upside down cake.
- All the ingredients must be at room temperature.
- Ingredients:
1# margarine or butter
3 cups of sugar
2 tsp vanilla extract (no imitation)
10 medium eggs (put apart 2 egg whites)
4 1/2 cups self rising flour
1 1/2 regular milk- Vegetable Shortening (to grease the pans)
- Procedure:
- Grease two 10″ Round Pan
2in deep, or one 11in x 15 in Sheet
2in deep.
- Add about 2 tbs of flour to each pans and shake it, so the grease inside the pans get all covered with flour.
- Turn the pan upside down and tap lightly to remove excess of flour. In any uncovered spot, touch up with shortening and flour.
- Put the margarine or butter in a bowl, and creamed.
- Add the sugar gradually and creamed , be sure that is soft and creme, do this for 20 minutes.
- Add the vanilla and keep creaming.
- Add the eggs 1 by 1 and mix for 1 min each addition.
- Preheat oven to 325 degrees.
- Sift the flour.
- Add the flour gradually to the mix, alternating with milk . Start with flour and end with flour. Careful: Do not over mix.
- Add mix to the pans, then place around the pan a soaking wet Bake-Even Strip
. This will help you to have an even cake.
- Bake for 55 to 60 min. Insert a tooth pic in the middle of the cake. If it comes out clean, the cake is done.
- Let the cake cool for 10 min. Run a thin knife between the cake and side of the pan.
- Flip the cake and put it on a board. Let it cool at least one hour prior to icing.
- Grease two 10″ Round Pan

I have learned a lot about the art of making cakes through your website. And have tried this recipe. It was the best cake I have ever done. I now understand how to have an even cake… I no longer have to cut the top of to even it out. Thank you!!!
